Where does the buffalo milk come from?

All buffalo farms have been selected by Mandara on the basis of strict controls rigorously followed by the quality control managers of our laboratory. Thanks to the investment in state-of-the-art machinery, we are able to carry out extremely detailed analyses, from the barn to the finished product.

How did Buffalo Milk mozzarella come about?

Defined as “the white pearl of Campania”, buffalo mozzarella is undoubtedly marked by a strong tradition and culture in the panorama of Italian cheeses. Already in the twelfth century the first historical documents appear that testify to the existence of a cheese at the time called “mozza” in the area of Capua, offered by the monks of San Lorenzo together with a piece of bread to pilgrims. The diffusion of the product in the regions of Campania and Lazio has been favored mainly by the climatic and territorial conditions suitable for buffalo breeding. The difficult storage of the product limited its availability to the places of production and for a long time it was, in fact, mainly spread in smoked form under the name of “provatura”, to increase the shelf life. It was only in 1570 that the term “mozzarella” appeared for the first time in a famous text by Bartolomeo Scappi, a cook at the papal court. The term derives from the verb “mozzare“, an operation that consists of working the piece of spun curd and detaching the individual mozzarella with the index fingers and thumbs in their typical rounded shape. Towards the second half of the eighteenth century, mozzarella became a widely consumed product, mainly thanks to the Bourbons who built a large buffalo farm with an adjoining experimental dairy for the transformation of milk in the province of Caserta. Since then, it can be said that the spread of the product has gone hand in hand with the increase in communication routes. The ancient history of mozzarella has therefore been handed down to the present day, thanks to the traditional method used for its production accompanied by technological developments that have favored its preservation and, consequently, its diffusion nationally and internationally.

How do you store Mandara buffalo mozzarella?

Once opened, you can store your package of Mandara buffalo mozzarella in the fridge for up to 4 days. Remember that it should be consumed at room temperature.

How do you eat Mozzarella Mandara?

Follow the instructions on our packaging! To enhance the taste and fragrance of our Mandara buffalo milk mozzarella, we recommend that you remove it from the fridge an hour before consuming it or heat it in a bain-marie by immersing the package in warm water at 20°C for 10 minutes. You can also reheat it in the microwave for up to 10 seconds.
